Cheesy Potato & Brussel Spout Snack Bowl

A filling snack with healthy carbs and tons of taste!

Ingredients
  

  • Vegan Cheese
  • 1-2 Cups Brussel Sprouts
  • 1-2 Potatoes
  • Olive Oil (truffle oil is amazing)
  • Garlic Powder
  • Pink Salt
  • Old Bay Seasoning (optional)

Instructions
 

  • Place brussel sprouts and sliced russet potatoes into large ziplock bag(gallon). Pour 2 Tbsp oil into bag, then add seasonings.
  • Clench the bag closed and shake vigorously to evenly coat veggies with oil & seasonings.
  • Bake your potatoes and veggies at 370 degrees fahreinheit approx. one hour(checking every 30 minutes.) Layer some vegan cheese on top of the food towards the end of cook time(add once just tender enough to prevent over cooking cheese).
  • Serve and enjoy!
