Stuffed Sweet Potatoes

Equipment

  • 2 Sweet Potatoes
  • 1-2 Cups Garbanzo Beans(chickpeas)
  • 1 Cup Green Onions
  • 1 Avocado ripe and ready to eat.
  • 1 Lime or 2 Tbsp lime juice.
  • Pink Salt
  • Chili Powder
  • Black Pepper
  • Tahini

Instructions
 

  • Bake sweet potatoes in oven at 350 degrees for at least an hour(until tender).
  • While sweet poatoes are cooking, place 2 cups of cooked garbanzo beans into a bowl. Mix with oil, salt, pepper, and chili powder. Place on parchment paper lined baking sheet for 30 minutes(until crispy, but not hard)
  • Once food is done cooking, mix roasted chickpeas in with the sweet potatoes, lime juice, tahini, avocado, and any other ingredients.
  • Serve and enjoy!
