When I was diagnosed with HIV, I had little knowledge about how to treat the disease.

One thing I knew for sure post-diagnosis was that food can be medicine, you just have to eat immunity-boosting meals.

Although there is no evidence of an HIV-curing plant, what you consume on a daily basis plays a pivotal role in your overall quality of life.

These recipes not only revitalize your body but will also help you to feel more mentally sound.

In this post, I’m going to share with you five healthy meals for HIV patients.

Olive Rice & Beans

The first recipe is a simple, but unique, rice and beans dish.

I am a representative of the keep it simple club and I pride myself in making quick recipes that taste delicious, this one is no exception.

Nutrition-wise, this recipe provides you with great protein and healthy fats to help you build/maintain muscle.

Nutritional yeast is also an ingredient that gives you great nutrients like B12.

I recently discovered coconut rice and had to make it the base of this recipe! You can purchase the most important ingredients below.

Ingredients
  

  • 1 Packet Coconut Jasmine Rice
  • 1/2 Can Chopped Black Olives
  • 1/2 Can Pasta Sauce
  • 1/2 Cup Black Beans
  • 1/4 Cup Green Onions
  • 1 Tbsp Vegan Mayonaise
  • 1 Tbsp Nutritional Yeast
  • 1 Tsp Pink Salt

Instructions
 

  • Cook your rice and beans, then add all of your ingredients into a bowl and mix.
  • Enjoy!

Pasta & Meatballz

This pasta is packed with protein and great nutrition to keep you going strong!

  • Medium Sauce Pan
  • Plate Or Bowl

Ingredients
  

  • 1-2 Cups Chickpea Pasta
  • 1-2 Cups Pasta Sauce
  • 5-6 Vegan Meatballs
  • 1 Cup Spinach
  • 1 Tsp Garlic Powder
  • Olive Oil
  • Vegan Cheese Shreds

Instructions
 

  • First, rinse and cook your pasta.
  • Next, cook your pasta shells with sauce and the rest of your ingredients.
  • Let your ingredients simmer, stirring every couple minutes.
  • While your pasta cooks, heat up your vegan meatballs. Add the meatballs to your pasta once finished cooking.
  • Put your pasta in a serving dish and enjoy!

Hallelujah sandwich

I ate three of these before I started writing this post, and I am proud.

I was that kid in middle school that would ask for seconds, thirds, and fourths of the ham sandwiches during field trips.

Creating this recipe was nostalgic for me because the flavors taste so similar to non-vegan deli sandwiches…just healthier.

I try my best to incorporate the most nutrition into every meal that I consume, so adding sprouts was a must for me.

Good-tasting vegan cheese is much easier to find nowadays, purchase my recommended brands of plant-based deli slices below.

I also used organic sprouted bread for this recipe because it has more nutrition than typical brands on the market!

  • (Optional) Avocado Slices
  • (Optional) Tomato Slices

Instructions
 

  • Spread a layer of vegan mayonaise on to a slice of bread. Add on a slice of vegan cheese, some sprouts, a vegan deli slice, and pasta sauce.
  • Repeat this process for the second story of the sandwich.
  • Add in some agave or maple syrup for extra flavor!
  • Serve and enjoy!

This is one of my favorite recipes because I love yogurt and its turquoise!

This dish has mushroom powder and spirulina to elevate the nutritional content of the snack.

Spirulina is a sea alga that contains potent amounts of protein per gram.

It also acts as a natural food coloring to change recipes into works of art!

Trippn’ Turquoise Yogurt Bowl

A satisfyingly sweet and healthy treat!

  • 1/2-1 Cup Dairy-Free Yogurt
  • Blue Spirulina
  • 1 Scoop Mushroom Blend
  • 1 Tsp Chia Seed

  • 1/4 Cup Mixed Berries

Instructions
 

  • Pour one scoop of mushroom blend powder and blue spirulina into a bowl with dairy-free yogurt.
  • Mix until the yogurt as turned a beautiful turquoise color!
