When I started eating vegan, I would search for quick vegan dinner recipes to help satisfy my cravings for McDonalds.
After my much trial-and-error, I’ve finally created my own stash of vegan recipes that keep me fuller longer.

Vegan Stuffed Sweet Potatoes
Stuffed Sweet Potatoes

- 2 Sweet Potatoes
- 1-2 Cups Garbanzo Beans(chickpeas)
- 1 Cup Green Onions
- 1 Avocado ripe and ready to eat.
- 1 Lime or 2 Tbsp lime juice.
- Pink Salt
- Chili Powder
- Black Pepper
- Tahini
Instructions
- Bake sweet potatoes in oven at 350 degrees for at least an hour(until tender).
- While sweet poatoes are cooking, place 2 cups of cooked garbanzo beans into a bowl. Mix with oil, salt, pepper, and chili powder. Place on parchment paper lined baking sheet for 30 minutes(until crispy, but not hard)
- Once food is done cooking, mix roasted chickpeas in with the sweet potatoes, lime juice, tahini, avocado, and any other ingredients.
- Serve and enjoy!
Protein Pasta Easy Vegan Recipe
This is one of my favorite vegan summer meal plan recipes because of it’s sweet, creamy, and tangy flavor!

Vegan Honey Dijon Protein Pasta
Equipment
- Medium Sauce Pan
- Wok Skillet
Ingredients
- 4 tbsp Vegan Honey Mustard Sauce
- 1-2 Cups Organic Spinach
- 1 Sweet Onion
- 1/2 Cup Green Onion
- 1 Cup Mushrooms
- Pink Salt Truffle salt is even better.
- Black Pepper
- 1 Pack Gluten-Free Protein Pasta
- 5 Vegan Meatballs (Optional)
Instructions
- Rinse, strain, and boil your pasta al dente style.
- Add your vegan honey mustard sauce, seasonings, and prepare veggies for sauteeing.
- Chop onions, spinach, mushrooms, and add to a lightly greased wok skillet. Saute until tender.
- Add your veggies to the pasta and mix well.
- Serve and enjoy!
Brussel Sprout Potato Bowl
Cheesy Potato & Brussel Spout Snack Bowl
Equipment
- Oven
- Instant Pot optional
Ingredients
- Vegan Cheese
- 1-2 Cups Brussel Sprouts
- 1-2 Potatoes
- Olive Oil (truffle oil is amazing)
- Garlic Powder
- Pink Salt
- Old Bay Seasoning (optional)
Instructions
- Place brussel sprouts and sliced russet potatoes into large ziplock bag(gallon). Pour 2 Tbsp oil into bag, then add seasonings.
- Clench the bag closed and shake vigorously to evenly coat veggies with oil & seasonings.
- Bake your potatoes and veggies at 370 degrees fahreinheit approx. one hour(checking every 30 minutes.) Layer some vegan cheese on top of the food towards the end of cook time(add once just tender enough to prevent over cooking cheese).
- Serve and enjoy!
Chickpea Pizza Bowl
This healthy vegan party food tastes like pizza with a sweet touch.
Chickpea Cauliflower Pizza Bowl
Equipment
- High Speed Blender
- Medium Bowl
Ingredients
- 3-4 Vine Ripened Tomatoes
- Apple Cider VInegar
- Basil
- Sun Dried Tomatoes
- Smoked Paprika
- 2 Cups Steamed/Roasted Cauliflower Rice
- Nutritional Yeast
- Dates
- Pink Salt
- Kale
- Chickpeas
- Tahini
Instructions
- Add cauliflower florets, kale, and soaked chickpeas to an instant steaming pot. Cook for 26 minutes.
- Into a high speed blender, add the rest of your ingredients and blend(I like to pulse a few times to maintain chunky texture).
- Pour pizza sauce onto your cauliflower veggie mix and enjoy! You can also add some vegan pepproni and cheese to really spice things up! *OMG I'm salivating*
Easy Raw Vegan Recipe
Tomato Basil Pâté ~Raw Vegan Style~
Equipment
- Blender Having a tamper works best.
Ingredients
- 3 Vine-Ripened Tomatoes
- 1 Cup Sun Dried Tomatoes
- Tahini
- 1/2 Cup Sunflower Seeds
- 1 Lime
- 1/4 Cup Apple Cider Vinegar
- Dates
- Smoked Paprika
- Black Pepper
- Pink Salt
- Red Bell Pepper optional
- Green Onion optional
- Nuitritonal Yeast optional
Instructions
- Blend all of your ingredients until smooth.
- Pour into a serving bowl and enjoy! Coat with roasted bell pepper, green onions, and nutrional yeast for extra flavor/texture!
