Zesty Lentil-Stuffed Sweet Potatoes W/ Tahini
Ingredients
Method
- Pre-heat oven to 370 degrees.
- Take your sweet potatoes, place them in a baking dish, then lightly coat them with oil(use your hands to spread evenly).
- Place potatoes in over and cook for an hour(checking often with fork to test tenderness). *you can also steam, baking gives tastiest results though*
- Once potatoes have cooked, split open with a large knife or fork, then being filling with the rest of your ingredients. Squeeze lime juice ontop of the other ingredients, mix it in.
- Enjoy!
Peanut Butter Vegan Pad Thai Recipe

Peanut Butter Zuchinni Pad Thai W/ Roasted Walnuts
Ingredients

- Turn your zucchinis into noodles by chopping off the sides, then spiralizing them through your veggie noodle machine. Place noodles into bowl and set aside.
- In your high speed blender(I'm using a Vitamix), add the rest of your ingredients(minus the walnuts and oil) and blend until smooth. Pour sauce onto noodles and mix in thoroughly, set aside in bowl.P.S: It's best to mix sauce in with noodles first to allow extra time for marination(helps zucchini tenderize).
- Next, add chopped bell pepper and walnuts into small sauce pan with oil. Saute until tender, around 15 minutes.
- Add cooked peppers and walnuts in with your noodles.
- Serve And Enjoy!
Vegan Cauliflower Pizza Bowl
It’s funny how I made this recipe by mistake!
After looking for a way to make my cauliflower rice more exciting, I added a creamy raw vegan tomato sauce with tahini to the mix.
Throw in some chickpeas and you have a protein packed vegan dinner recipe, taste like pizza(not kidding bro)!

- Add cauliflower florets, kale, and soaked chickpeas to an instant steaming pot. Cook for 26 minutes.
- Into a high speed blender, add the rest of your ingredients and blend(I like to pulse a few times to maintain chunky texture).
- Pour pizza sauce onto your cauliflower veggie mix and enjoy! You can also add some vegan pepproni and cheese to really spice things up! *OMG I'm salivating*
Quick Vegan Recipe With Brussel Sprouts!
Cheesy Potato & Brussel Spout Snack Bowl
Ingredients
Method
- Place brussel sprouts and sliced russet potatoes into large ziplock bag(gallon). Pour 2 Tbsp oil into bag, then add seasonings.
- Clench the bag closed and shake vigorously to evenly coat veggies with oil & seasonings.
- Bake your potatoes and veggies at 370 degrees fahreinheit approx. one hour(checking every 30 minutes.) Layer some vegan cheese on top of the food towards the end of cook time(add once just tender enough to prevent over cooking cheese).
- Serve and enjoy!
Raw Tomato Basil Pate

Tofu lovers unite! This vegan recipe is filling and will delight your taste buds.

Method
- Add oil to a low-simmering sauce pan.
- Coat your tofu in a large bowl with oil, flour. and seasonings. Shake well and flip tofu simultaneously.
- Add tofu to sauce pan and cook until gold brown. Once cooked, set aside in a bowl.
- Into a wok skillet, add your vegetables(with tofu towards end of cook time). This is where you can drizzle soy sauce over the ingredients.
- Once food has cooked, place into a bowl and add-on tahini, avocado, and any other desired toppings. Enjoy!
